Simply the zest

These lemon, lime and coconut bars are the perfect saviour for a hot summer day when even the cream in ice cream feels too heavy to satisfy your sweet tooth. I had a real issue with my patience waiting for these to cool to dig in but trust me it is worth the wait! My favourite way to indulge in these is fresh out of the fridge when these treats are at their most refreshing! Keep refrigerated and consume within 2 days (not that you’ll have any trouble with this part!)

Pastry base:

  • ½ a cup unsalted butter
  • ½ a cup powdered sugar
  • ¼ teaspoon salt
  • 1 cup plain flour
  • ½ a cup shredded coconut

Filling:

  • 4 large eggs
  • 3 tablespoons plain flour
  • 1 1/3 cups granulated sugar
  • ¾ cup lime and lemon juice (freshly squeezed)
  • ¼ teaspoon salt

Directions:

  1. Make crust: Whisk together flour, powdered sugar and salt. Cube butter and add to the mixture, use fingers to combine until mixture resembles a crumble
  2. Transfer mixture to well buttered baking dish, pushing down on pastry and sides to create a compact even coating. Freeze for 30 minutes.
  3. Turn the oven on to 190 degrees Celsius
  4. Once the crust has been chilled, place in the oven to bake for 20 minutes, turning once at 10 minutes to ensure an even bake
  5. Meanwhile combine ingredients for filling, whisking together well
  6. Remove crust from the oven and add filling
  7. Bake until filling is set and edges are slightly browned reducing heat to 160 degrees Celsius
  8. Cool completely, slice into squares, sprinkle with icing sugar and ENJOY!
