Let’s taco bout it

This is one of my go to quick, easy and healthy recipes for a Saturday lunch. With super simple ingredients but delicious flavours from the spices it’s really fresh and for a little heat top it off with a pinch of chilli flakes! This recipe calls for guacamole so make sure to check out yesterday’s recipe here for a guac that will rock your world! I served these with baked slimming world whole wheat wraps and it was the perfect accompaniment!

Ingredients:

  • Juice of half a lemon
  • 2 teaspoons of each spice: cumin, garlic granules, cayenne pepper and smoked paprika
  • 1 sweet potato
  • 1 cauliflower
  • 1 tablespoon Greek yoghurt
  • 1 heaping tablespoon guacamole
  • 1 tablespoon vegetable oil

Directions:

  1. Pre-heat the oven to Fan 180 degrees C
  2. Chop the cauliflower and sweet potato into bite sized chunks
  3. Combine spices, lemon juice and vegetable oil in a jug or jar to create a marinade
  4. In a large bowl combine the sweet potato and a third of the marinade
  5. Mix and place on a baking sheet
  6. Put the sweet potato in the oven and cook for 20 – 25 minutes
  7. In the meantime combine cauliflower and a third of the marinade in a bowl
  8. Mix and place on a baking sheet
  9. Put the cauliflower in the oven for 15 minutes
  10. Combine cooked cauliflower and sweet potato and add remaining third of the marinade
  11. Separate into two smaller bowls add guacamole and Greek yoghurt and enjoy!!
