We’re going bananas

Banana bread was a household staple when I was growing up and I now love to make it at home. The minute I smell it baking it takes me right back to warmth and comfort of being a child. This particular recipe resembles a cake more than bread and we often eat it as a mid-afternoon snack with a cup of tea. It’s absolutely delicious and a recipe my mother taught me to make growing up!

Ingredients:

  • 2 Cups self-raising flour
  • 3 large overly ripe bananas, mashed
  • ½ Cup coconut sugar
  • ½ Cup demerara sugar
  • ½ Cup vegetable oil
  • 2 Eggs
  • 2 Teaspoons vanilla extract
  • 1 Teaspoon ground cinnamon

Directions:

  1. Preheat oven to 160 degrees C
  2. Gently beat eggs
  3. Add mashed bananas, vanilla extract and oil to beaten eggs and stir
  4. In a separate bowl mix flour, sugar and cinnamon
  5. Stir dry ingredients into the banana mixture and make sure it is well combined
  6. Grease pan
  7. Bake for 60 minutes
  8. Leave to cool and enjoy!
