Happy Easter everyone!! There’s nothing I love more than a Sunday morning, starting off with a coffee in bed followed by a brisk 5km walk and then pancakes! The fluffier the better! It’s the thing I look forward to most in the week and makes for the perfect brunch topped with maple syrup and fresh fruit! Here’s my foolproof pancake recipe:

Ingredients:
- 2 Cups all purpose flour
- 1 ½ Teaspoon baking soda
- 2 Tablespoons caster sugar
- 1 Egg
- 2 Tablespoons vegetable oil
- 1 ¾ Cups milk (I prefer semi-skimmed but alternatives can be used)
- 2 teaspoons vanilla extract
- ½ Teaspoon ground cinnamon
Directions:
- Lightly mix all ingredients to create a smooth batter
- Leave for five minutes to thicken
- Heat a frying pan adding a teaspoon of butter
- Once the butter has melted add a tablespoon of mixture to the pan
- Once bubbles begin to form on the top about 90 seconds depending on heat flip and wait 60 seconds before removing the pancake
- Repeat step 5 until you have no more batter left and then dig in!
