Don’t listen to the crêpe

Happy Easter everyone!! There’s nothing I love more than a Sunday morning, starting off with a coffee in bed followed by a brisk 5km walk and then pancakes! The fluffier the better! It’s the thing I look forward to most in the week and makes for the perfect brunch topped with maple syrup and fresh fruit! Here’s my foolproof pancake recipe:


  • 2 Cups all purpose flour
  • 1 ½ Teaspoon baking soda
  • 2 Tablespoons caster sugar
  • 1 Egg
  • 2 Tablespoons vegetable oil
  • 1 ¾ Cups milk (I prefer semi-skimmed but alternatives can be used)
  • 2 teaspoons vanilla extract
  • ½ Teaspoon ground cinnamon


  1. Lightly mix all ingredients to create a smooth batter
  2. Leave for five minutes to thicken
  3. Heat a frying pan adding a teaspoon of butter
  4. Once the butter has melted add a tablespoon of mixture to the pan
  5. Once bubbles begin to form on the top about 90 seconds depending on heat flip and wait 60 seconds before removing the pancake
  6. Repeat step 5 until you have no more batter left and then dig in!
